The wood is in the background, serving an expressive fruit, with notes of peach and apricot. Agitation reveals a sweeter woodiness, with notes of roasting.
The palate balances between fat, acidity and a sorbet-like texture. It will take a little more time to gain in binding and homogeneity. The finish concludes on notes of frosted lemon.
Serve between 4 and 8°C to fully appreciate the aromatic expression. You will enjoy it as an aperitif but also throughout the meal with foie gras or chocolate desserts. 10 years of ageing.
